I would say Thursar/Khurite with max height. For skills he will need blocking, all the combat maneuvering skills, defensive stance and aggressive stance, active regeneration and passive regeneration.

Your necromancy is good if you managed to bring Jarik back from the abyss. So does that make him Jarik the undead paladin?

Have any suggestions on what would be a good start for me?
Would like to be an archer with sword as backup. Had planned on Veela thinking it would be best archer class.
Is that doable? Or better to choose another race?

I wouldn't do Veela for archer even though it -should- be the best class for them, only because they do not have enough strength to use the better bows. Right now Thursar are the best for melee combat but for archery you should be able to get away with being a human Khurite since I don't think the damage bonus from size counts on bows (though I am not 100% sure on this).
